Central restaurant in Lima, Peru has been declared the best restaurant in the world according to the selection of 1080 culinary experts gathered under the brand World’s 50 Best Restaurants. Three more restaurants located in Lima made it to the list of the 50 best, confirming the quality of Peruvian cuisine. The kitchen and business of Central are run by the couple Virgilio Martinez and Pia Leon, who take their guests on a journey through Peru – 15 Peruvian ecosystems categorized by altitude.
The menu features dishes inspired by the Amazon rainforest, the Pacific Ocean, or the mountain peaks of the Andes, as well as indigenous cultures and the cultures of conquerors.
Hiša Franko in 32nd Place
This year, Spanish restaurants shone, with six of them among the top 50, including three in high second (Disfrutar, Barcelona), third (DiverXO, Madrid), and fourth place (Asador Extebarri, Bizkaia). The Danish Alechmist reached fifth place, while another restaurant from Peru (Lima) – Maido – came in sixth. Among the top ten are also Lido 84 from Italian Gardone Riviera, Atomix from New York, Quintonil from Mexico City, and the Parisian Table. No Croatian restaurant made the list, but it is worth congratulating our Slovenian neighbors – Hiša Franko, which ranked 32nd. The expert committee evaluated the restaurants where they dined in the past 19 months and were not allowed to vote for those with whom they had a vested interest. According to the rules, previous winners cannot occupy the first place but are moved to the Best of the Best list.
