Curly Kale Rich in Vitamins is Increasingly Becoming a Main Dish

The days are gone when a leaf of curly kale remained untouched on the plate, and today this healthy green leaf rich in vitamins is increasingly becoming a main dish.

Curly kale, whose leaves are green or purple, is related to cabbage.

-There are many variations of curly kale, explains Christoph Hahn from the University of Oldenburg in Germany. “It contains many healthy ingredients, so it can enrich the diet throughout the year. It can be eaten as a salad, drink, or soup,” he adds.

Hahn estimates that there are 120 to 150 types of this kale in Germany alone, which differ in the height that the leaves reach, how curly they become, their color, yield, taste, and nutritional content.

– The Italian variety palmizio has a mild taste and decorates salads and other dishes, explains Hahn.

The American variety Champion is bitter but contains many vitamins.
